APPLESAUCE SPICE DROPS

…which came about as a result of modifying a family recipe to fit what was available in my cupboards, thus:

pumpkin seeds, dried cherries, applesauce
  • 1 Cup Butter
  • 1 Cup Sugar
  • 2 Eggs 
  • 1 Cup Applesauce
  • 3 Cups Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Cloves
  • 1 tsp Cinnamon
  • 1 tsp Nutmeg
  • 1 Cup Dried Cherries**
  • 1/2 Cup Pumpkin Seeds***

DIRECTIONS:  Cream together butter and sugar, then beat in eggs one at a time.  Add applesauce.  At this point, the mixture will take on a funky curd-like texture:

Stir in dry ingredients — the order doesn’t particularly matter — then fold in dried cherries and pumpkin seeds. Which will give you dough like so:

Spoon onto ungreased baking sheet(s). Bake at 375 degrees (Farenheit) for approximately 10 minutes. Then serve and EAT!

**Normally this recipe calls for 1 cup raisins.
***A completely unnecessary ingredient; I’m just trying to get rid of the damn things.

    I’m afraid I haven’t quite ever gotten on board the pumpkin seed train. My mom used to roast ’em when I was a kid but despite starting young, I’ve simply never gained a taste for ’em.
    Other than that, these look yummy! 🙂

      My husband has to consume a lot of protein because of being on dialysis, so we tried them because they are a quick-eat protein punch when he needs one. But he ended up not liking them as solo snacks, so it’s been a challenge getting rid of them!
