(It was, of course, the ‘Madame’ that got me.  😉 )

 

CHOCOLATE NO-BAKE COOKIES

1/2 cup butter
1/2 cup milk
2 cups sugar
6 Tbsp cocoa
1 cup peanut butter
1 tsp vanilla
3 cups oats
1 cup shredded coconut
1 cup raisins

Directions:  In a large sauce pan, melt butter into milk over low heat.  Stir in sugar and cocoa* and bring to a boil for one minute.  Remove from heat, then add peanut butter to hot chocolate-y mixture until blended smoothly.  Stir in vanilla.  Add oatmeal, coconut, and raisins.  Coat dry ingredients thoroughly.  While mixture is still hot, drop rounded tablespoons-full onto wax paper to cool.

*It helps to dry-sift sugar and cocoa together first, but is not necessary.

Serving Notes:  Makes 25 servings at 200 calories each.  Can be refrigerated in air-tight container for up to two weeks.

Preparation Notes:  For moister cookies, use extra peanut butter and/or reduce oats.  For dairy-free cookies, substitute soy milk and dairy free margarine.

      NO. And yes. 🙂

      In real life, they look (and smell and taste) like delicious little mounds of chocolate. Perhaps, like me, they just don’t photograph well. 😉

          Well, I often look – in photographs – like a mule who’s been surprised with its teeth in disarray. You only see a carefully culled collection of snapshots. 😉

          BUT

          My poor, maligned cookies. 🙁

          Good thing beauty is not a requirement in my foodstuffs. 😉

      Somehow I knew you’d be in my corner, Jz. 🙂

      You can glass-pan them (it is *so* a verb!) and cut them like fudge after they set if you prefer.

      And I may experiment with this recipe a bit (pretzels & peanuts… or cashews & cranberries, maybe?) for Cookies of Christmas Future. 🙂
